Technical characteristics :

Grape variety : 80% Merlot des coteaux, 20% Cabernet-Sauvignon.

Vineyard : Plot selection
Monitoring of maturity and sensorial analysis of the berries
Harvested when ripe.
Vinification : Traditional vinification methods with close monitoring of fermentation temperatures
Long fermentation period (4 weeks).
Matures in vats.
Alcohol content : 13% Vol.

Organoleptic qualities :

Color : Deep garnet red.
Nose : Expressive. The initial bouquet gives off scents of ripe red fruit like cherries and blackberries
Then it develops hints of spices and green pepper.
Palate : Rich, developing tastes of cooked prunes.
The tannins are present but silky.

Serve between 16 -18°C.

Serving suggestions : All kinds of cooked red meat.
