Yield :
- Viognier : < 60 hl/ha,
- Chardonnay : < 60 hl/ha,
- Sauvignon : < 70 hl/ha.
Vineyard : Plot selection.
Harvested at night to protect the flavors
Monitoring of maturity and sensorial analysis of the berries.
Vinification : Harvested at night.
Peeling/pressing.
Juice extraction through direct pressure.
Selected yeasts are added with close monitoring of fermentation temperatures.
Matures in vats.
Alcohol content : 13% Vol.

Organoleptic qualities :

Color : Clear yellow with flashes of intense gold.
Nose : Rich and powerful floral scents changing to ripe white fruit.
(peaches, pears).
The nose then reveals hints of spices like nutmeg or cloves.
Palate : Dominated by a full-bodied and round taste with hints of dried apricot at the finish.

Serve between 10 - 12°C.

Serving suggestions : As a cocktail, with fish cooked in sauce or hard crust cheese (e.g. Cantal).
