Technical characteristics :

Grape variety : 100% Viognier
Amount Planted : 15 ha
Yield : < 60 hl/ha
Vineyard : Plot selection
Harvested at night to protect the flavors.
Monitoring of maturity and sensorial analysis of the berries.
Vinification : Harvested at night.
Peeling/pressing.
Juice extraction through direct pressure.
Selected yeasts are added with close monitoring of fermentation temperatures.
Matures in vats.
Alcohol content : 13% Vol.

Organoleptic qualities :

Color : Bright pale yellow with flashes of green.
Nose : Rich and complex scents, in particular exotic fruit like pineapples.
Palate : Direct, full-bodied attack.
Pleasant roundness.
Dominated by tastes of white fruit and then changes to mango and pineapple at the finish.
Nice length.

Serve between 10 - 12°C.

Serving suggestions : As a cocktail, with cheese or dessert.
