Cabernet - Sauvignon grape variety

Technical characteristics :

Grape variety : 100% Cabernet-Sauvignon.
Amount Planted : 45 ha.
Yield : < 50 hl/ha.
Vineyard : Plot selection.
Monitoring of maturity and sensorial analysis of the berries.
Harvested at maturity.
Vinification : Traditional vinification under carefully controlled fermentation temperatures.
Long fermenting period (4 weeks).
Matures in a vats.
Alcohol content : 13% Vol.

Organoleptic qualities :

Color : Dark red with flashes of violet.
Nose : Rich and concentrated.
Scents of dark red fruit, in particular ripe cherries and spices.
Palate : Structured, warm, full-bodied and rich with ripe fruit flavors.
Persistent end with hints of grilled flavors.

Serve between 16 - 18°C.

Serving suggestions : Cold cuts, red meat and game.
